Description

A moist and tender cake infused with the warm flavors of apple cider and spices, finished with a cinnamon-sugar glaze that mimics the beloved apple cider donut.

  • 2 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apple cider
  • ½ cup sour cream or plain Greek yogurt
  • For the Glaze:
  • ½ cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 10-inch Bundt pan or a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a small bowl, whisk together the apple cider and sour cream (or yogurt).
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the apple cider mixture, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  7. Pour the batter evenly into the prepared Bundt pan or baking pan.
  8. Bake for 35-45 minutes for a Bundt pan, or 30-35 minutes for a 9×13 inch pan, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
  10. For the Glaze: While the cake is cooling, melt the butter in a small saucepan. Stir in the granulated sugar and cinnamon until well combined.
  11. Once the cake is completely cool, brush the cinnamon-sugar glaze generously over the top and sides of the cake. Let the glaze set slightly before slicing and serving.

  • For an extra apple flavor, you can add ½ cup of finely diced apples to the batter before baking.
