Description

Ingredients

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apple cider
  • 1 cup powdered sugar
  • 4 ounces cream cheese, softened
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in 1 teaspoon vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the apple cider, beginning and ending with the dry ingredients. Mix until just combined.
  6. Divide batter evenly among cupcake liners, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.
  8. For the frosting: In a medium bowl, beat together softened cream cheese and softened butter until smooth.
  9. Gradually add powdered sugar, alternating with milk, until smooth and creamy. Stir in ½ teaspoon vanilla extract.
  10. Once cupcakes are completely cooled, frost them with the cream cheese frosting.
