Description

Ingredients

  • 1 cup apple cider
  • 1/2 cup chopped apples (like Honeycrisp or Fuji)
  • For the Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons apple cider
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch bundt pan or a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the apple cider, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  6. Gently fold in the chopped apples.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 35-45 minutes for a bundt cake, or 30-35 minutes for a 9×13 inch pan, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
  10. For the Glaze: In a small bowl, whisk together the powdered sugar, 2 tablespoons of apple cider, and vanilla extract until smooth. Add more cider, a teaspoon at a time, if needed to reach desired drizzling consistency.
  11. Drizzle the glaze over the cooled cake.
