  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Prepare the Apple Filling: In a small bowl, combine the diced apple, 1 tablespoon granulated sugar, cinnamon, and nutmeg. Stir to coat the apples evenly. Set aside.
  2. Make the Cookie Dough: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  4. Make the Cheesecake Swirl: In a medium bowl, beat the softened cream cheese and 1/4 cup granulated sugar until smooth. Stir in 1/2 teaspoon vanilla extract.
  5. Assemble the Cookies: Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
