These soft and chewy apple butter cookies are infused with warm spices and the rich flavor of apple butter, making them the perfect autumn treat.

- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup apple butter
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground allspice
- Optional: Granulated sugar for rolling
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Stir in the apple butter until fully incorporated.
- In a separate medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and allspice.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- If desired, roll rounded tablespoons of dough into balls and then into granulated sugar.
- Place dough balls about 2 inches apart on the prepared baking sheets.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are still slightly soft.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For extra spice, you can add 1/4 teaspoon of ground ginger to the dry ingredients.
- These cookies store well in an airtight container at room temperature for up to 3 days.
- You can also press the dough balls lightly with the bottom of a glass before baking for a flatter cookie.
