Description

These soft and chewy apple butter cookies are infused with warm spices and the rich flavor of apple butter, making them the perfect autumn treat.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup apple butter
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • Optional: Granulated sugar for rolling

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Stir in the apple butter until fully incorporated.
  5. In a separate medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and allspice.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. If desired, roll rounded tablespoons of dough into balls and then into granulated sugar.
  8. Place dough balls about 2 inches apart on the prepared baking sheets.
  9. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are still slightly soft.
  10. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra spice, you can add 1/4 teaspoon of ground ginger to the dry ingredients.
  • These cookies store well in an airtight container at room temperature for up to 3 days.
  • You can also press the dough balls lightly with the bottom of a glass before baking for a flatter cookie.
