Description

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1 large egg
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Red, white, and blue sprinkles
  • Royal icing (recipe below)

Instructions

  1. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  2. Beat in the vanilla extract, almond extract (if using), and egg until combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Divide the dough in half. Wrap each half in plastic wrap and chill for at least 30 minutes.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
  8. Use star-shaped cookie cutters (or any 4th of July themed cutters) to cut out shapes.
  9. Place cookies on the prepared baking sheets.
  10. Bake for 8-10 minutes, or until the edges are lightly golden.
  11. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  12. Decorate with royal icing and sprinkles.

Notes

  • For the Royal Icing: Whisk together 3 cups powdered sugar, 3 tablespoons meringue powder, and 6 tablespoons water until smooth and thick. Divide into separate bowls and tint with red and blue food coloring.
  • If you don’t have star-shaped cookie cutters, you can use any patriotic shapes you have.
  • Feel free to experiment with different sprinkle combinations!
